Stachys affinis is commonly called Crosne or Chinese Artichoke and is in the same plant family as mint and sage. Rather than being used for their leaves however, they are cultivated for their small edible tubers, which they produce in abundance. They are crunchy in texture, with a nutty flavour and can be eaten raw, pickled, dried, or cooked.
Plant tubers 2 or 3 inches deep and a few inches apart in a moist but well-drained full sun location in fall or spring for best results.
A 25-pack of tubers will allow you to begin harvesting after the first growing season. Once a patch is established, you will never run out!
